Spiralizing veggies has become hugely popular over the last few years and for good reason. You can create countless gluten-free, satisfying, nutritional and quick recipes. Let your imagination loose, and you will be surprised at what you can come up with. An excellent example of that is this vegan pesto recipe shared for our enjoyment by Chef Doris.
This vegan pesto recipe uses walnuts at its base and as a lover of walnuts I am utterly thrilled to use them here. I have always thrown them into my vegan pesto recipe, but I never used only walnuts and the result is incredibly tasty.
It is great fun to get out a spiralizer and grab the kids or grandchildren and make lots of interesting shapes that will ultimately become what ends up on the dinner table. Yummy in their tummy!
