You might think that a vegan shepherd’s pie would be the definition of an oxymoron, yet instead, let’s look at it a different way. I’d like to think that a shepherd could be vegan and I can see her right now eating a plant-based lunch while watching over the lambs.
My inspiration for this recipe is my mum’s very British shepherd’s pie that she would prepare for my brother Terry and I. Although she passed away three years ago I find comfort in making the meals of my childhood. Because it is the memories that these recipes bring forth that add meaning to my life.
The difficulty comes when you lead a whole food plant-based lifestyle, and the memorable recipe is composed of meat and dairy. Although it can seem like a daunting task when you think of transposing the family recipe I’d like to encourage you and let you know that it is easier than you think.
It may take a few tries, and I’m here to tell you that your loved one would be thrilled to see you creating a healthier version. And for me after making the vegan shepherd’s pie, I was able to keep the authenticity of mum while adding what I feel is important and necessary for my lifestyle.
I love my mum and know that she is my shepherd even though she isn’t here in the flesh.
